Does the cost include labor?

A batch's cost is what its materials cost. Labor and overhead are tracked separately, as expenses.

What if I'm short on a material?

When you log the batch, if a material isn't in stock, nothing moves and it tells you how much is missing.

Can I sell one product in different pack sizes?

Yes. Stock is kept in one unit, say pounds, and sold by the bag, by the case or loose.
